Ingredients

- ½ tablespoon olive oil
- 1 pound shredded white American cheese
- ¼ cup chopped sweet onion
- ¼ to ½ cup low-sodium chicken broth
- ½ cup finely diced fresh tomatoes
- ¼ cup chopped cilantro
- 1 cup milk
- ½ to 1 jalapeno, de-seeded and minced
- Salt and black pepper, to taste
Instructions
- Heat the olive oil in a skillet and saute the onion and jalapeno in there.
- Turn the heat down and add the milk and shredded cheese.
- Keep stirring all the time until the cheese melts.
- Add enough of the broth to thin it out to a good consistency.
- Stir in the tomatoes and cilantro, and season with salt and pepper.
- Serve hot.
