- 1 pound large shrimp, peeled and deveined
- 1 pound cheese tortellini
- 1 diced fresh Roma tomato
- 3 tablespoons salted butter
- 2 minced garlic cloves
- 2 minced large basil leaves
- 1 tablespoon all-purpose flour
- ¼ cup shredded parmesan
- ½ cup heavy whipping cream
- Salt and black pepper, to taste
Instructions
- Cook the tortellini following the directions on the package, then drain it.
- Meanwhile, melt the butter in a skillet, add the shrimp, and cook for 2 to 3 minutes, until no longer translucent.
- Stir in the garlic, basil and diced tomato, and cook for 1 minute.
- Stir in the flour and keep mixing until smooth, then add the cream and parmesan.
- Stir in the tortellini, tossing to coat, then serve with basil and more parmesan.
