Ingredients

Scale
  • 2 large eggs, at room temperature
  • ¼ cup unsalted butter, at room temperature
  • ¼ cup canola oil
  • 1½ cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup white sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon molasses
  • ½ teaspoon ground cinnamon
  • ½ cup buttermilk

FOR THE CINNAMON SUGAR COATING:

  • ½ cup melted unsalted butter
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Combine the butter, white sugar and oil in a bowl and then stir in the vanilla extract and eggs until smooth.
  3. Now add the buttermilk gradually and the dry ingredients bit by bit, mixing and scraping down the bowl sides to get a smooth batter. Keep mixing until there are no lumps.
  4. Put ½ cup of the batter in a small bowl, mix in the cinnamon and molasses, and set aside.
  5. Grease a loaf pan with nonstick spray.
  6. Spoon half the main batter into the loaf pan and use a wide spatula to level it out.
  7. Add half the molasses batter on top.
  8. Add the rest of the main batter on top of that and finish with the rest of the molasses batter.
  9. Swirl the batters together using a butter knife and bake for 45 to 50 minutes.
  10. Let it cool for 10 minutes in the loaf pan and then loosen the edges and transfer it to a wire rack.
  11. To make the coating, put the melted butter in a dish and mix in the brown sugar, white sugar and ground cinnamon, stirring well.
  12. Dip the loaf into the coating, making sure all 6 sides are covered. You can also spoon it over the edges of the loaf and the top.
