- 2 large eggs, at room temperature
- ¼ cup unsalted butter, at room temperature
- ¼ cup canola oil
- 1½ cups all-purpose flour
- 1 teaspoon vanilla extract
- 1 cup white sugar
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon molasses
- ½ teaspoon ground cinnamon
- ½ cup buttermilk
FOR THE CINNAMON SUGAR COATING:
- ½ cup melted unsalted butter
- ¼ cup brown sugar
- ¼ cup white sugar
- ½ teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 degrees F.
- Combine the butter, white sugar and oil in a bowl and then stir in the vanilla extract and eggs until smooth.
- Now add the buttermilk gradually and the dry ingredients bit by bit, mixing and scraping down the bowl sides to get a smooth batter. Keep mixing until there are no lumps.
- Put ½ cup of the batter in a small bowl, mix in the cinnamon and molasses, and set aside.
- Grease a loaf pan with nonstick spray.
- Spoon half the main batter into the loaf pan and use a wide spatula to level it out.
- Add half the molasses batter on top.
- Add the rest of the main batter on top of that and finish with the rest of the molasses batter.
- Swirl the batters together using a butter knife and bake for 45 to 50 minutes.
- Let it cool for 10 minutes in the loaf pan and then loosen the edges and transfer it to a wire rack.
- To make the coating, put the melted butter in a dish and mix in the brown sugar, white sugar and ground cinnamon, stirring well.
- Dip the loaf into the coating, making sure all 6 sides are covered. You can also spoon it over the edges of the loaf and the top.
