- 6 bacon slices
- 6 cups peeled, diced potatoes
- 2 cans evaporated milk
- 2 chopped green onions
- 8 beaten eggs
- 1½ cups shredded monterey jack cheese
- 1 tablespoon olive oil
- ½ teaspoon each salt and black pepper
Instructions
- Preheat the oven to 350°F.
- Fry the bacon in the oil until crisp and then chop into pieces.
- Layer the potato slices in a greased baking dish and sprinkle the green onions on top.
- Whisk the eggs with the evaporated milk, and pour over the potatoes and green onions.
- Pour the egg mixture into the casserole dish, then add the bacon on top, followed by the cheese.
- Season to taste with salt and black pepper.
- Bake for 45 minutes or until golden brown and set on top.
- Let it rest for 10 minutes or so, and then slice and serve.
