Fried Potatoes and Onions

This simple side dish is something you’re going to want to make all the time. It’s so easy and goes well with just about everything.

Ingredients

  • 1 pound Yukon Gold potatoes
  • ½ yellow (or sweet) onion
  • 2 tablespoons butter
  • Paprika and/or basil, for garnish (optional)
  • Peanut oil, for frying
  • Salt and black pepper, to taste

Instructions

  1. Peel and chop the potatoes and onion into bite-sized chunks.
  2. Heat some peanut oil with the butter in a skillet over a moderate to high heat.
  3. Add the potatoes and onion and cook until the potatoes are tender, stirring often.
  4. Season with salt and pepper, drain off the excess oil and serve hot, garnished with paprika and/or basil if liked.
