- 1 pound Yukon Gold potatoes
- ½ yellow (or sweet) onion
- 2 tablespoons butter
- Paprika and/or basil, for garnish (optional)
- Peanut oil, for frying
- Salt and black pepper, to taste
Instructions
- Peel and chop the potatoes and onion into bite-sized chunks.
- Heat some peanut oil with the butter in a skillet over a moderate to high heat.
- Add the potatoes and onion and cook until the potatoes are tender, stirring often.
- Season with salt and pepper, drain off the excess oil and serve hot, garnished with paprika and/or basil if liked.
