Ingredients

- 1 1/2 pounds NY strip steaks, cut into strips
- 1 pound halved or quartered baby golden potatoes
- 3 minced garlic cloves
- 1 onion, in wedges
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- Salt and black pepper, to taste
Instructions
- Melt half the butter with the oil in a skillet over a moderately high heat.
- Add the potatoes, herbs and some salt and pepper.
- Saute for 10 minutes or until the potatoes are tender.
- Remove the potatoes to a bowl and keep them warm.
- Add the rest of the butter, the onion and the steaks.
- Cook until the steaks are done to your liking, then serve.
