- 1 Box White Cake Mix
- 1 tsp. Vanilla Extract
- 1 ¼ cup Buttermilk
- 3 Large Eggs
- ¼ cup Oil
- 1 ½ cups. Coconut Shredded
- ¾ cup chopped pecans
For The Frosting:
- 4 cup Powdered Sugar
- 16 Oz. Cream Cheese Softened
- 2 tsp. Vanilla Extract
- 1 cup Butter Softened
Instructions
- Preheat the oven to 350 degrees F. Spray two 9-inch cake pans with nonstick cooking spray and set aside.
- Add the white cake mix, vanilla, oil, and eggs into a mixing bowl. Mix well to combine the batter. Add the coconut and chopped pecans into the batter and carefully fold in.
- Divide the batter between the two greased pans.
- Bake for 20 to 25 minutes or until the cake layers are thoroughly cooked. Let them cool completely before assembling the cake.
- Once the cake layers are completely cooled, you can remove them from the pans.
- Add the cream cheese, vanilla extract, softened butter, and powdered sugar to a mixing bowl. Beat with a hand mixer until smooth and creamy.
- Place one cake layer over a cake plate. Spread some frosting over the cake layer and add the second layer.
- Spread the frosting over the top and sides. Let it chill before you cut a piece, and enjoy!
