Ingredients

- 2 sliced large cucumbers
- 3 chopped fresh tomatoes
- 1 large red or white onion, cut into rings
- ¼ cup olive oil
- ¼ cup white sugar
- 1 cup water
- ½ cup white distilled vinegar
- 1 teaspoon dried basil
- Salt and black pepper, to taste
Instructions
- Put the vegetables in a bowl and toss to combine.
- Pour over the water.
- Whisk the oil, sugar, basil, vinegar, salt, and pepper in a small bowl and add the the vegetables.
- Stir to coat and marinate for at least 2 hours before serving.
