Meatloaf with Mashed Potatoes and Cheese

This hearty homestyle comfort food dish is really tasty and the whole family will enjoy it. The meatloaf itself is full of flavor and the mashed potato topping is the jewel in the culinary crown.

Ingredients

  • 1 ½ pounds ground beef
  • 1 tablespoon olive oil
  • 3 minced garlic cloves
  • 1 large egg
  • ¼ cup tomato sauce
  • ¾ cup breadcrumbs
  • 1 chopped onion
  • ½ cup frozen peas
  • ¼ cup chopped fresh parsley
  • ¼ cup BBQ sauce
  • Salt and black pepper, to taste

FOR THE TOPPING: 

  • pounds peeled, chopped potatoes
  • 1 cup shredded cheddar cheese
  • 4 tablespoons butter
  • ¼ cup heavy whipping cream
  • Salt and black pepper, to taste

Instructions

  1. Heat the oil in a skillet and then saute the onions until tender.
  2. Stir in the garlic and cook for 30 seconds and then take the skillet off the heat.
  3. Put the onion mixture in a bowl and let it cool.
  4. Preheat the oven to 400 degrees F.
  5. Add the other ingredients for the meatloaf to the bowl and mix using your hands.
  6. Shape the mixture into a loaf and bake in a greased casserole dish for 30 minutes.
  7. Meanwhile you can boil the potatoes until they’re tender.
  8. Drain and mash with the cream and butter, along with some salt and pepper.
  9. Top the meatloaf with the mashed potatoes and then the cheddar cheese.
  10. Bake for 15 minutes and then serve hot.
