- 1 ½ pounds ground beef
- 1 tablespoon olive oil
- 3 minced garlic cloves
- 1 large egg
- ¼ cup tomato sauce
- ¾ cup breadcrumbs
- 1 chopped onion
- ½ cup frozen peas
- ¼ cup chopped fresh parsley
- ¼ cup BBQ sauce
- Salt and black pepper, to taste
FOR THE TOPPING:
- 1½ pounds peeled, chopped potatoes
- 1 cup shredded cheddar cheese
- 4 tablespoons butter
- ¼ cup heavy whipping cream
- Salt and black pepper, to taste
Instructions
- Heat the oil in a skillet and then saute the onions until tender.
- Stir in the garlic and cook for 30 seconds and then take the skillet off the heat.
- Put the onion mixture in a bowl and let it cool.
- Preheat the oven to 400 degrees F.
- Add the other ingredients for the meatloaf to the bowl and mix using your hands.
- Shape the mixture into a loaf and bake in a greased casserole dish for 30 minutes.
- Meanwhile you can boil the potatoes until they’re tender.
- Drain and mash with the cream and butter, along with some salt and pepper.
- Top the meatloaf with the mashed potatoes and then the cheddar cheese.
- Bake for 15 minutes and then serve hot.
