- 1 pound ground beef
- 1 cup tomato salsa
- 1-ounce package taco seasoning
- 14 ounces canned diced tomatoes in juice
- 10 soft corn tortillas (6-inches across)
- ½ cup shredded Mexican blend or Colby cheese
Instructions
- Preheat the oven to 350 degrees F.
- Brown the ground beef in a deep skillet over a moderate to high heat, breaking it up with a wooden spoon.
- When the beef is brown all over, stir in the tomatoes and taco seasoning.
- Arrange half the tortillas over the bottom of a 13 x 9-inch baking dish so they overlap.
- Spoon the meat mixture on top and then add the rest of the tortillas.
- Spread salsa over the top and sprinkle over the cheese.
- Bake for 20 minutes or until the cheese is bubbly and melted.
- Serve immediately.
