Mexican Taco Lasagna

This delicious recipe is so easy to make. It combines delicious south of the border ingredients with an Italian cooking technique and the result is something everyone is going to love and want second helpings of!

Ingredients

  • 1 pound ground beef
  • 1 cup tomato salsa
  • 1-ounce package taco seasoning
  • 14 ounces canned diced tomatoes in juice
  • 10 soft corn tortillas (6-inches across)
  • ½ cup shredded Mexican blend or Colby cheese

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Brown the ground beef in a deep skillet over a moderate to high heat, breaking it up with a wooden spoon.
  3. When the beef is brown all over, stir in the tomatoes and taco seasoning.
  4. Arrange half the tortillas over the bottom of a 13 x 9-inch baking dish so they overlap.
  5. Spoon the meat mixture on top and then add the rest of the tortillas.
  6. Spread salsa over the top and sprinkle over the cheese.
  7. Bake for 20 minutes or until the cheese is bubbly and melted.
  8. Serve immediately.
