Mouthwatering Tortellini Soup

This delicious soup is just perfect for those chilly days when you’re finding it hard to warm up. It’s bursting with fresh and tasty flavors and it’s super-easy to prepare as well.

Ingredients

  • 1 pound ground Italian sausage
  • 1 chopped yellow onion
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 3 minced garlic cloves
  • ½ teaspoon dried thyme
  • Pinch of red pepper flakes
  • 2 cups beef broth (or another flavor)
  • 1½ tablespoons tomato paste
  • 14½ ounces canned fire-roasted tomatoes
  • 3 cups arugula
  • 10 ounces fresh cheese tortellini
  • 4 cups vegetable broth or chicken broth (or beef)
  • Grated parmesan, to serve
  • Fresh thyme and/or basil, to serve (optional)

Instructions

  1. Brown the sausage in a pot over a moderate heat, adding the onion when the meat is almost all browned.
  2. Turn the heat down and stir in the garlic, thyme, parsley, oregano, basil, and red pepper flakes.
  3. Cook for a minute, stirring all the time.
  4. Whisk the tomato paste and ½ cup beef broth together, then add the vegetable or chicken broth to the pot along with the canned tomatoes and tomato paste beef broth mixture.
  5. Turn the heat up, bring to a boil and then turn it down to a simmer.
  6. Add the tortellini and simmer for 10 to 15 minutes or until done. Take the pan off the heat, stir in the arugula and season to taste.
  7. Serve hot with freshly grated parmesan cheese and fresh herbs, if liked, for garnish.
