- 1 pound ground Italian sausage
- 1 chopped yellow onion
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 3 minced garlic cloves
- ½ teaspoon dried thyme
- Pinch of red pepper flakes
- 2 cups beef broth (or another flavor)
- 1½ tablespoons tomato paste
- 14½ ounces canned fire-roasted tomatoes
- 3 cups arugula
- 10 ounces fresh cheese tortellini
- 4 cups vegetable broth or chicken broth (or beef)
- Grated parmesan, to serve
- Fresh thyme and/or basil, to serve (optional)
Instructions
- Brown the sausage in a pot over a moderate heat, adding the onion when the meat is almost all browned.
- Turn the heat down and stir in the garlic, thyme, parsley, oregano, basil, and red pepper flakes.
- Cook for a minute, stirring all the time.
- Whisk the tomato paste and ½ cup beef broth together, then add the vegetable or chicken broth to the pot along with the canned tomatoes and tomato paste beef broth mixture.
- Turn the heat up, bring to a boil and then turn it down to a simmer.
- Add the tortellini and simmer for 10 to 15 minutes or until done. Take the pan off the heat, stir in the arugula and season to taste.
- Serve hot with freshly grated parmesan cheese and fresh herbs, if liked, for garnish.
