Pineapple Sunshine Cake

Ingredients

  • 2 cups of flour
  • 1 ¼ cup granulated sugar
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 eggs
  • 2 tsp baking soda
  • 20 ounces crushed pineapple, divided
  • 1 cup whipped topping
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 350 degrees F and spray a 9×13 baking pan with cooking spray. Set aside.
  2. Reserve ¼ cup of the pineapple. Add the remaining pineapple into a bowl together with sugar, flour, salt, baking soda, vanilla, and eggs. Mix until everything is combined
  3. Transfer the batter to the greased pan and bake for 35-45 minutes or until a light golden brown. Remove from the oven and let the pineapple cake cool down completely. In the meantime, beat the whipped topping until fluffy.
  4. Sprinkle powdered sugar and beat until combined. Spread the whipped topping on top of the pineapple cake when it is completely cooled down. Top with the reserved pineapple.
  5. Serve and enjoy!
