Sweet and Spicy Cinnamon Bread

This incredible cinnamon loaf smells amazing the whole time it’s in the oven and it’s a rich-flavored, sweet and moist loaf everyone will adore.

Ingredients

  • 1 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • 1 cup 2% milk
  • 2½ tablespoons ground cinnamon 
  • ½ teaspoon salt
  • 1½ teaspoons baking powder
  • 1 tablespoon lemon juice
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 6 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F. 
  2. Grease a 9 x 5-inch loaf pan heavily and then sprinkle flour in it.
  3. Whisk the flour, baking soda, baking powder, white sugar, salt, and 1 tablespoon of the cinnamon.
  4. Whisk the milk and lemon juice in another bowl and let it sit for 5 minutes, then mix in the oil, eggs and vanilla.
  5. Add a third of the dry ingredients mixture to the wet ingredients mixture and stir well.
  6. Repeat twice more until it’s all incorporated.
  7. Stir the remaining 1½ tablespoons of cinnamon with the brown sugar and melted butter together to make the cinnamon swirl.
  8. Spoon half the main batter into the prepared loaf pan.
  9. Pour three lines of cinnamon swirl mixture on top across the whole loaf, then swirl with a toothpick or skewer, making 8-shapes or S-shapes.
  10. Spoon the remaining batter on top and repeat with the rest of the cinnamon swirl mixture to make more swirls on top.
  11. Bake for 50 minutes or until done. If a toothpick inserted into the center comes out clean, it’s ready.
  12. Let it cool for no longer than 5 minutes in the pan (otherwise it will stick!) and turn out on to a wire rack to finish cooling.
