Ingredients
Cookies:
- Butter, unsalted and softened
- Egg
- Cream cheese, softened
- White sugar
- Vanilla extract
- Baking soda
- Salt
- All-purpose flour
Caramel:
- Caramels
- Heavy cream
Chocolate Ganache:
- Milk chocolate chips
- Heavy cream
Instructions
- Preheat the oven to 350 degrees F. Prepare 3 cookie trays by lining them with baking paper.
- Add butter and cream cheese into a mixing bowl. Beat with a handheld mixer for 3 minutes or until combined and fluffy.
- Beat in the eggs, vanilla, and sugar. In a second bowl, add the dry ingredients: salt, baking soda, and flour. Whisk to combine.
- Gradually add the dry mixture to the wet mixture and mix between each addition. Scoop some dough and flatten it gently with your fingers. Your cookies should be about 2 inches in size.
- Align the Twix cookies on the baking tray and bake for 9-12 minutes. The cookies are done when they no longer look wet. Remove from the oven and let the cookies cool down completely. Meanwhile, place the caramels into a microwave-safe bowl and add 2 tablespoons of heavy cream. Melt them in the microwave in 30-second intervals, mixing between each. Continue this until melted and combined.
- In the center of each cookie, add half a tablespoon of the melted caramel. And flatten it. Place the cookies in the fridge. Meanwhile, melt the chocolate chips together with a quarter cup of heavy cream in the microwave. Garnish the top of the cookies with the melted chocolate.
- Place them in the fridge to set the chocolate.
