Broccoli Salad Recipe

This delicious salad is filled with lovely colours and textures. It is everyone’s favourite!

  • Yield: Serves 8

Ingredients

  • 1 pound bacon
  • 1 cup good quality mayonnaise
  • 2 tsp apple cider vinegar
  • ½ cup white sugar
  • 2 pounds fresh broccoli cut into florets
  • 1 cup roasted cashew nuts
  • ¼ of a medium red onion, peeled and finely minced

Instructions

  1. Cook the bacon until crisp. Drain well on paper towels and then crumble. Set aside.
  2. In a large mixing bowl, whisk the mayonnaise, vinegar, and sugar together. Stir until the sugar dissolves.
  3. Add the broccoli florets, crumbled bacon, and chopped onion. Coat all well with the dressing.
  4. Cover and chill for 2 hours. Stir in the roasted cashew nuts. Pour into a serving dish.
  5. Let come to room temperature before serving. (About 15 minutes of standing time.)
  6. Serve and enjoy!
