- 10 eggs
- 1 teaspoon hot sauce
- ½ cup mayonnaise
- 20 peeled, de-veined medium raw shrimp
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- 1 tablespoon plus 1 teaspoon Cajun seasoning
- 1 thinly sliced jalapeno
- ¼ teaspoon white sugar (optional)
- Lemon slices and fresh chives, for garnish
Instructions
- Put the eggs in a large pot and pour in enough water to cover by an inch.
- Bring to a boil and then take the pot off the heat, cover tightly with a lid and leave to stand for 12 minutes.
- Drain the eggs and run under cold water until cool enough to handle, adding ice cubes to speed up the cooling if you want.
- Now peel the eggs and slice lengthwise in half.
- Take out the eggs and put them in a bowl, then mash them using a fork.
- Mash in the mayonnaise, hot sauce, mustard, sugar (if using) and a teaspoon of Cajun seasoning until the mixture is smooth, and chill.
- Use a tablespoon of Cajun seasoning to season the raw shrimp, heat some oil in a skillet and pan fry them for 2 minutes per side or until done.
- Transfer them on to a plate to stop them cooking.
- Pipe the yolk mixture into the egg whites with a pastry bag fitted with a big tip, then top with a shrimp, some jalapeno and chives.
- Either serve right away with lemon wedges or chill for up to 2 hours.
