- 1 pound ground beef
- 2 x 16-ounce bags of tortilla chips
- ¾ cup water
- 1 package taco seasoning
- 16 ounces shredded cheddar cheese or Monterey Jack
- 1 can refried beans
- 3 diced Roma tomatoes
- 2 sliced green onions
- ½ diced yellow onion
Instructions
- Preheat the oven to 400 degrees F.
- Brown the ground beef in a skillet on the stove and then add the onions and cook until the beef is brown throughout and the onions are tender.
- Drain and discard the grease, then put the beef mixture back in the skillet.
- Sprinkle the taco seasoning on top then add the water, bring to a simmer and turn the heat down to gently simmer until most of the liquid has evaporated.
- Meanwhile, add a layer of chips to 2 parchment paper-lined baking sheets.
- Divide dollops of the refried beans between both and then divide the beef between them and sprinkle the cheese on top.
- Bake for 15 minutes.
- Top with diced tomatoes and green onions and serve right away.
