Apple Fritter Bread

This recipe captures everything we adore about those bakery-style fritters — tender apples, warm cinnamon, sweet swirls of brown sugar, and a soft, buttery crumb — all in a simple loaf pan.
Course: Baking, Dessert, Snack
Cuisine: American

Ingredients

Bread:
  • 1/3 cup light brown sugar
  • 1 tsp ground cinnamon
  • 2/3 cup sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 3/4 tsp baking powder
  • 1/2 cup whole milk
  • 1 Granny Smith apple peeled and diced
  • 1 tbsp sugar
  • 1 tbsp cinnamon
Glaze:
  • 1 cup powdered sugar
  • 1/4 cup whole milk

Method

  1. Preheat oven to 350°F (175°C). Grease a 9-inch loaf pan.
  2. In a small bowl, mix brown sugar and 1 teaspoon cinnamon. Set aside.
  3. In a large bowl, beat butter and sugar until creamy. Add eggs one at a time, then mix in vanilla.
  4. Stir together flour and baking powder. Add to the batter, alternating with milk, and mix until smooth.
  5. Toss diced apple with 1 tablespoon sugar and 1 tablespoon cinnamon.
  6. Pour half the batter into the loaf pan. Top with half the apples and half the brown sugar mixture. Lightly press down.
  7. Add remaining batter, then top with remaining apples and brown sugar mixture. Gently swirl with a knife.
  8. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
  9. Whisk glaze ingredients until smooth and drizzle over cooled bread.
  10. Enjoy!
