Apple Fritters

There’s something irresistible about the sweet, crispy, and warm aroma of apple fritters straight out of the kitchen. These golden, tender pastries are a perfect combination of soft dough, tender chunks of apple, and a sweet glaze that melts in your mouth.

Ingredients
  

  • 3 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon apple pie spice
  • Pinch of salt
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ⅔ cups peeled and finely chopped apples
  • 2 tablespoons unsalted melted butter
  • Oil for frying
  • Confectioners’ sugar for garnish (optional)

Method
 

Heat the oil:
  1. Pour a few inches of oil into a deep-sided skillet or pot and heat over medium-high heat until it reaches 350°F (175°C).
Prepare the batter:
  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Blend on high speed until smooth.
Add wet ingredients:
  1. Mix in the milk, eggs, and vanilla extract until fully incorporated. Stir in the melted butter and blend again for a smooth batter.
Fold in apples and spice:
  1. Gently fold in the finely chopped apples and apple pie spice until evenly distributed.
Fry the fritters:
  1. Carefully scoop ⅓ to ½ cup of batter into the hot oil. Use a spatula or cooking spoon to press it slightly flat. Fry until golden brown on one side, then carefully flip to brown the other side and allow the fritter to puff up.
Drain and serve:
  1. Remove the fritters from the oil and place on a paper towel-lined rack to drain excess oil. Repeat with the remaining batter.
Garnish:
  1. Optionally, sprinkle with confectioners’ sugar while still warm for a sweet finishing touch. Serve immediately.
