Cook the Bacon
- In a large skillet over medium heat, cook the chopped bacon until crisp. Use a slotted spoon to remove the bacon pieces and set aside, leaving the bacon fat in the pan.
Sauté the Onion and Potatoes
- Add the olive oil to the skillet with the bacon fat. Add the chopped onion and cook for 3-4 minutes until softened and translucent. Then add the sliced potatoes. Cook, stirring occasionally, for about 10-15 minutes or until the potatoes start to become tender and golden.

Add the Cabbage
- Stir in the chopped cabbage, salt, black pepper, and crushed red pepper (if using). Cook for another 10-12 minutes, stirring frequently, until the cabbage is wilted and tender and the potatoes are fully cooked.

Combine and Serve
- Return the cooked bacon to the skillet and stir everything together. Taste and adjust seasoning if needed.
Serve warm
- Serve your potatoes, cabbage, and bacon hot as a hearty side dish or a satisfying main course.
