Bacon, Cabbage, and Potatoes

Ingredients
  

  • 3 large potatoes peeled and sliced into ½-inch moons
  • 6 slices bacon chopped (or more if you like it extra bacon-y)
  • 1 small head of cabbage roughly chopped
  • 1 large onion chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper optional, for a little heat

Method
 

Cook the Bacon
  1. In a large skillet over medium heat, cook the chopped bacon until crisp. Use a slotted spoon to remove the bacon pieces and set aside, leaving the bacon fat in the pan.
Sauté the Onion and Potatoes
  1. Add the olive oil to the skillet with the bacon fat. Add the chopped onion and cook for 3-4 minutes until softened and translucent. Then add the sliced potatoes. Cook, stirring occasionally, for about 10-15 minutes or until the potatoes start to become tender and golden.
Add the Cabbage
  1. Stir in the chopped cabbage, salt, black pepper, and crushed red pepper (if using). Cook for another 10-12 minutes, stirring frequently, until the cabbage is wilted and tender and the potatoes are fully cooked.
Combine and Serve
  1. Return the cooked bacon to the skillet and stir everything together. Taste and adjust seasoning if needed.
Serve warm
  1. Serve your potatoes, cabbage, and bacon hot as a hearty side dish or a satisfying main course.
