For the Cake:
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup 1 stick unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup sour cream
  • 1 pint fresh blueberries
For the Crumb Topping:
  • 3 tablespoons cold butter
  • ¼ cup all-purpose flour
  • ¼ cup granulated sugar

Method

Preheat and Prepare Pan:
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish or line it with parchment paper.
Make the Cream Cheese Filling:
  1. In a medium bowl, beat the cream cheese, sugar, vanilla, and egg until smooth and creamy. Set aside.
Mix the Cake Batter:
  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs, one at a time, then add the vanilla.
  4. Mix in the sour cream until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Assemble the Cake:
  1. Spread half of the cake batter evenly in the prepared baking pan.
  2. Spoon the cream cheese filling over the batter and gently spread it into an even layer.
  3. Scatter the blueberries over the cream cheese.
  4. Top with the remaining cake batter and spread it carefully to cover.
Make the Crumb Topping:
  1. Using a fork or pastry cutter, mix the cold butter, flour, and sugar together until crumbly. Sprinkle evenly over the top of the cake.
Bake:
  1. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cool before slicing.
  2. Enjoy!
