Method
- Preheat the oven to 350°F (175°C). Lightly grease a 12×9-inch baking dish with cooking spray or butter.
Prepare the egg mixture:
- In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth. Set aside.

Layer the tater tots:
- Arrange the frozen tater tots in an even layer on the bottom of the prepared baking dish. Make sure they cover the entire base.
Add the eggs and cheese:
- Pour the egg mixture evenly over the tater tots, making sure all tots are fully submerged. Sprinkle 1 cup of the shredded cheddar cheese over the top.

Add bacon:
- Evenly distribute the cooked and crumbled bacon across the casserole.
Bake the casserole:
- Place the dish in the preheated oven and bake at 375°F (190°C) for 40–45 minutes, or until the eggs are set and the cheese is golden brown.
Rest before serving:
- Remove the casserole from the oven and let it cool for 10 minutes to make slicing easier.
Serve:
- Slice into squares and serve warm. Optional garnishes include chopped green onions, fresh parsley, or a dollop of sour cream.
