Breakfast Tater Tot Casserole

It’s the kind of recipe that turns a busy morning into a special occasion without requiring hours in the kitchen. Imagine waking up to a warm, golden casserole bubbling with melted cheese, crispy tater tots, savory sausage, and fluffy eggs.

Ingredients
  

  • 12 large eggs
  • ½ cup 2% milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 32 oz bag frozen tater tots
  • 2 cups shredded cheddar cheese divided
  • 6 thick-cut bacon slices cooked and crumbled

Method
 

  1. Preheat the oven to 350°F (175°C). Lightly grease a 12×9-inch baking dish with cooking spray or butter.
Prepare the egg mixture:
  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth. Set aside.
Layer the tater tots:
  1. Arrange the frozen tater tots in an even layer on the bottom of the prepared baking dish. Make sure they cover the entire base.
Add the eggs and cheese:
  1. Pour the egg mixture evenly over the tater tots, making sure all tots are fully submerged. Sprinkle 1 cup of the shredded cheddar cheese over the top.
Add bacon:
  1. Evenly distribute the cooked and crumbled bacon across the casserole.
Bake the casserole:
  1. Place the dish in the preheated oven and bake at 375°F (190°C) for 40–45 minutes, or until the eggs are set and the cheese is golden brown.
Rest before serving:
  1. Remove the casserole from the oven and let it cool for 10 minutes to make slicing easier.
Serve:
  1. Slice into squares and serve warm. Optional garnishes include chopped green onions, fresh parsley, or a dollop of sour cream.
