Ingredients
  

  • Zest of 1 lemon
  • 2 cups all-purpose flour divided
  • 1 large egg
  • 2 cups fresh blueberries
  • 2 tsp baking powder
  • 1 cup sugar plus extra for topping
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • 1 tsp salt
  • ½ cup butter softened

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. In a large bowl, beat together the butter, sugar, and lemon zest until light and fluffy.
  3. Add the egg and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together 1¾ cups flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix just until combined.
  6. Toss the blueberries with the remaining ¼ cup flour to coat. Gently fold them into the batter.
  7. Spread the batter evenly into the prepared baking dish and sprinkle a little sugar over the top.
  8. Bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
