Cheese, Potato, and Smoked Sausage Casserole

Ingredients
  

  • 3 cups potatoes cut into chunks and boiled
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ lb Velveeta cheese cut into pieces
  • ½ cup shredded cheddar cheese
  • 1 lb smoked sausage halved lengthwise and sliced
  • tsp paprika

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Combine potatoes and sausage:
  1. In the prepared baking dish, mix together the boiled potato chunks and sliced smoked sausage.
Make the cheese sauce:
  1. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute to create a roux. Slowly add the milk while whisking until smooth and slightly thickened.
Add the cheeses and seasonings:
  1. Stir in the salt, black pepper, and Velveeta cheese. Continue stirring until the Velveeta is fully melted and the sauce is smooth.
Assemble the casserole:
  1. Pour the cheese sauce over the potato and sausage mixture in the baking dish. Stir gently to coat everything evenly.
Add the topping:
  1. Sprinkle the shredded cheddar cheese over the top, and lightly dust with paprika for color and flavor.
Bake:
  1. Place the casserole in the preheated oven and bake for 35–40 minutes, until the cheese is melted and bubbly.
Rest and serve:
  1. Let the casserole sit for 10 minutes before serving to allow the sauce to set slightly.
