Finely chop the chicken into very small pieces using a sharp knife, or pulse briefly in a food processor until minced.
Transfer the chicken to a large bowl. Add eggs, mozzarella, almond flour, garlic powder, herbs, salt, and pepper. Mix thoroughly until well combined.
Heat olive oil in a large skillet over medium heat.
Scoop spoonfuls of the mixture into the skillet and flatten slightly with a spatula to form small patties.
Cook for 3–4 minutes per side, or until golden brown and fully cooked through.
Avoid overcrowding the pan; cook in batches if necessary.
