Cheesy Ground Beef Rice Casserole

There’s something about a warm, cheesy casserole that instantly feels like home, and this cheesy ground beef rice casserole hits all the right notes. It’s hearty, satisfying, and packed with layers of flavor: seasoned ground beef, tender rice, a rich tomato-based sauce, and gooey melted cheese that ties it all together.

Ingredients
  

  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 cup chicken broth
  • 2 onions diced
  • 1 cup sour cream
  • 2 tsp garlic powder
  • 2 cups shredded cheddar cheese divided
  • 8 oz tomato sauce
  • 1 cup frozen green peas
  • Salt pepper, and oregano, to taste

Method
 

  1. Preheat the oven to 250°F (120°C) and grease a casserole dish.
Cook the beef and onions:
  1. In a large skillet over medium-high heat, sauté the ground beef and diced onions until the beef is browned and the onions are softened.
Add the garlic and seasonings:
  1. Stir in the garlic powder and cook for 30 seconds. Drain any excess grease. Reduce the heat to medium and season with salt, pepper, and oregano to taste.
Combine the main ingredients:
  1. Add the tomato sauce, cooked rice, frozen peas, chicken broth, and 1 cup of shredded cheddar cheese to the skillet. Stir to combine and let the mixture simmer until the cheese is melted and everything is well incorporated.
First bake:
  1. Spread the mixture evenly into the prepared casserole dish. Bake for 15 minutes.
Prepare the sour cream topping:
  1. In a small bowl, combine the sour cream and the remaining 1 cup of shredded cheddar cheese.
Add the topping and finish baking:
  1. Spread the sour cream and cheese mixture over the casserole. Bake for an additional 15–20 minutes, or until the top is bubbly and lightly golden.
Serve:
  1. Let the casserole sit for a few minutes before serving. Enjoy hot!
