Heat the olive oil in a large skillet over medium-high heat.
Season the shrimp with salt and pepper, then add them to the skillet. Sauté for 2–3 minutes per side, or until the shrimp are fully cooked and lightly seared. Remove the shrimp from the skillet and set aside.
Reduce the heat to medium, and add the butter and minced garlic to the skillet. Cook until the butter is melted and the garlic is fragrant, about 1–2 minutes.
Pour in the white cooking wine and simmer until it reduces by half, intensifying the flavor.
Slowly whisk in the heavy whipping cream, stirring continuously. Simmer until the sauce has thickened slightly, about 3–5 minutes.
Stir in the grated Parmesan cheese until fully incorporated and creamy.
Return the cooked shrimp to the skillet and toss to coat them evenly in the sauce. Cook for an additional 1–2 minutes to heat through.
Serve immediately over pasta, rice, or your favorite vegetables. Garnish with extra Parmesan or chopped parsley if desired.
