Easy Burrito Casserole

This recipe takes all the best parts of a burrito—seasoned meat, beans, cheese, and spices—and layers them into a baked casserole that’s perfect for weeknight dinners, potlucks, or meal prep. Instead of rolling individual burritos, this dish lets you assemble everything in one pan, bake, and enjoy a warm, cheesy, hearty meal that satisfies everyone at the table.

Ingredients
  

  • 1 ½ lb ground beef
  • 1 packet taco seasoning
  • 1 can mild enchilada sauce
  • 1 can refried beans
  • 1 can corn drained
  • 8 large flour tortillas cut in half
  • 2 cups shredded taco blend cheese
  • 1 small can green chiles
  • Green onions chopped, for garnish (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook the ground beef until fully browned. Drain any excess fat.
  3. Stir in the taco seasoning and cook for an additional 2–3 minutes to allow the flavors to blend.
  4. Add the corn, refried beans, enchilada sauce, and green chiles to the skillet. Mix thoroughly and simmer for 5 minutes.
  5. Arrange a layer of 4 tortilla halves at the bottom of the prepared baking dish.
  6. Spread half of the meat mixture evenly over the tortillas, then sprinkle with half of the shredded cheese.
  7. Repeat with the remaining tortillas, meat mixture, and cheese, creating a second layer.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and garnish with chopped green onions if desired. Serve warm.
