In a large skillet over medium-high heat, brown the ground sausage until fully cooked, breaking it apart as it cooks. Do not drain the grease—it adds flavor to the dish.
Reduce the heat to medium and stir in the coleslaw mix. Cook for a few minutes until the cabbage begins to soften.
Add the minced ginger, garlic, and soy sauce. Stir well to combine all the ingredients.
Continue to cook, stirring occasionally, until the cabbage is tender but still slightly crisp, about 5–7 minutes.
Drizzle sesame oil over the top, garnish with chopped green onions, and serve immediately.
