Fried Bologna Sandwiches

Ingredients
  

  • 6 slices bologna
  • 4 slices bread
  • 2 Tbsp mayonnaise
  • 2 thick tomato slices
  • 2 slices cheddar cheese
  • Cooking spray

Method
 

  1. Spread 1 tablespoon of mayonnaise on two slices of bread.
  2. Top the mayo-covered bread with a slice of tomato, then add a slice of cheddar cheese on top.
  3. Heat a skillet over medium-high heat and lightly coat with cooking spray.
  4. Slice an “X” through the center of each bologna slice. Place the bologna in the hot skillet and fry for 3–4 minutes per side, until golden brown and slightly caramelized.
  5. Remove the cooked bologna from the skillet. Place three slices on each prepared sandwich.
  6. Top with the remaining bread slices and serve immediately.
