Fried Potatoes and Onions with Smoked Sausage

This recipe is all about making the most of what you have—potatoes, onions, and sausage—cooked together in one pan until everything is golden, crispy, and infused with rich, smoky flavor.

Ingredients
  

  • 1 lb smoked Polish sausage sliced
  • lbs russet potatoes cut into ½-inch cubes
  • ½ teaspoon seasoned salt
  • ½ teaspoon Italian seasoning
  • Black pepper to taste
  • ½ green bell pepper chopped
  • ½ red bell pepper chopped
  • 1 small yellow onion diced
  • 2 tablespoons olive oil or canola oil
  • 1 tablespoon butter
  • Shredded Parmesan cheese for serving

Method
 

  1. Wash and peel the potatoes if desired, then cut them into even ½-inch cubes so they cook evenly.
  2. Heat a large skillet over medium heat and add the butter. Once melted, add the diced onion and cook for 3–4 minutes until soft and translucent.
  3. Remove the onions from the skillet and set them aside on a plate.
  4. In the same skillet, add the olive oil and let it heat up.
  5. Add the cubed potatoes, chopped bell peppers, seasoned salt, black pepper, and Italian seasoning. Stir everything together so the potatoes are well coated.
  6. Spread the mixture into an even layer and cover the skillet. Cook for 12–15 minutes, stirring occasionally, until the potatoes begin to soften and turn golden.
  7. Add the sliced smoked sausage to the skillet. Stir to combine with the potatoes and peppers.
  8. Continue cooking uncovered for another 8–10 minutes, stirring occasionally, until the sausage is heated through and slightly browned, and the potatoes are crispy on the outside and tender inside.
  9. Return the cooked onions to the skillet and stir everything together. Cook for an additional 3–5 minutes to blend the flavors.
  10. Taste and adjust seasoning if needed.
  11. Remove from heat and sprinkle with shredded Parmesan cheese before serving.
  12. Serve hot, with extra Parmesan on the side if desired.
