Fried Potatoes, Onions, and Polish Sausage

Few side dishes are as comforting, versatile, and downright satisfying as fried potatoes and onions. This humble dish takes simple ingredients—potatoes, onions, a little oil, and a few seasonings—and transforms them into golden, crispy, caramelized perfection.

Ingredients
  

  • 2 large onions cut into wedges
  • 1 lb Cajun smoked sausage
  • 1 lb smoked turkey sausage
  • 2 lb baby red potatoes halved
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

Prepare the Sausage:
  1. Slice both the Cajun smoked sausage and smoked turkey sausage into ½-inch thick pieces.
Combine Ingredients:
  1. In a large mixing bowl, add the sliced sausages, halved baby red potatoes, and onion wedges.
Season and Toss:
  1. Drizzle the olive oil over the mixture. Sprinkle with Cajun seasoning, paprika, salt, and pepper. Toss everything thoroughly until all the ingredients are evenly coated with oil and spices.
Arrange on Baking Sheet:
  1. Spread the mixture in a single layer on a parchment paper-lined baking sheet. This helps the potatoes and onions roast evenly without sticking.
Bake:
  1. Bake in a preheated oven at 400°F (200°C) for 45 minutes, or until the potatoes are tender and the sausages are browned. Stir halfway through baking for even roasting.
Serve:
  1. Serve hot as a hearty breakfast, brunch, or dinner side dish.
