Preheat the oven:
- Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
Prepare the seasoning mixture:
- In a medium bowl, combine the olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and black pepper. Mix until well combined.
Coat the shrimp:
- Add the peeled and deveined shrimp to the bowl and toss thoroughly so each piece is evenly coated with the garlic-Parmesan mixture.
Arrange for roasting:
- Spread the shrimp in a single layer on the prepared baking sheet, making sure they aren’t overlapping to ensure even cooking.

Roast the shrimp:
- Place the baking sheet in the preheated oven and roast for 8–10 minutes, or until the shrimp turn pink, opaque, and slightly golden on the edges.

Add finishing touches:
- Remove the shrimp from the oven and immediately sprinkle with chopped parsley and a squeeze of fresh lemon juice to brighten the flavors.

Serve:
- Serve hot as an appetizer, over pasta, or alongside a fresh salad for a light meal.
