Method
Make the honey mustard sauce:
- In a medium bowl, combine the honey and mustard. Stir until smooth and set aside.
Preheat the pan:
- Place a cast-iron skillet or heavy-bottomed pan over high heat. Add the olive oil and heat until shimmering.
Season and sear the pork chops:
- Sprinkle garlic powder evenly over both sides of the pork chops. Place them in the hot skillet and cook for 3 minutes on the first side without moving them to get a nice sear.

Flip and sear:
- Turn the pork chops over and cook the other side for 3 minutes.
Add the honey mustard glaze:
- Using a basting brush, generously coat both sides of each pork chop with the prepared honey mustard sauce.

Cook with glaze:
- Let the pork chops cook for another 5 minutes on one side, then flip and brush the other side with more sauce. Cook for an additional 5 minutes, allowing the glaze to caramelize slightly and coat the chops.

Rest the pork chops:
- Remove the pork chops from the pan and let them rest for 2–3 minutes before serving.

Serve:
- Plate the pork chops, spoon any remaining glaze from the pan over the top.
- Enjoy!
