Ingredients
  

  • 2 large egg whites
  • ¾ cup avocado oil
  • ½ teaspoon salt
  • cup granulated sugar
  • cup dark brown sugar packed
  • ¼ cup unsweetened applesauce
  • cup raisins
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, whisk the egg whites until slightly frothy.
  3. Add the avocado oil, salt, granulated sugar, brown sugar, and applesauce to the egg whites. Mix well until fully combined.
  4. Stir in the raisins and vanilla extract.
  5. Sprinkle the baking soda and cinnamon over the mixture and stir again.
  6. Add the old-fashioned oats and flour, and mix until a soft dough forms. Do not overmix.
  7. Use a spoon or cookie scoop to drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
  9. Let the cookies cool on the baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.
