Mandarin Orange Chicken Salad

It’s the kind of salad that feels light and refreshing while still being satisfying enough to serve as a full meal. The combination of tender chicken, crisp greens, juicy mandarin oranges, and a flavorful dressing creates a wonderful mix of textures and tastes.

Ingredients
  

  • ½ cup green onions finely chopped
  • 4 cups cooked chicken shredded or cut into small cubes
  • 8 oz cream cheese softened
  • 1 cup celery finely chopped
  • 1 cup mayonnaise
  • 1 15 oz can mandarin orange segments, drained very well
  • 2 teaspoons Worcestershire sauce
  • 1 cup slivered almonds
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Method
 

  1. In a large mixing bowl, add the cooked chicken, chopped celery, drained mandarin oranges, chopped green onions, and slivered almonds. Gently toss the ingredients together so they are evenly combined.
  2. In a separate medium bowl, add the softened cream cheese and mayonnaise. Using a spoon or hand mixer, blend them together until smooth and creamy.
  3. Stir in the Worcestershire sauce, garlic powder, and a pinch of salt and black pepper. Mix well until the dressing is fully combined and smooth.
  4. Pour the creamy dressing over the chicken mixture in the large bowl. Use a spoon or spatula to gently fold everything together until the chicken and vegetables are evenly coated with the dressing. Be careful not to mash the mandarin oranges while mixing.
  5. Taste the salad and adjust the seasoning with additional salt and pepper if needed.
  6. Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 4 hours. Chilling the salad allows the flavors to blend together and improves the texture.
  7. Before serving, give the salad a gentle stir. Serve cold and enjoy.
