No Bake Chocolate Oat Bars

Perfect for busy weeknights, last-minute parties, or even a midday pick-me-up, these bars combine the rich flavor of chocolate with the hearty texture of oats, making them a crowd-pleaser for both kids and adults.

Ingredients
  

  • 1 cup unsalted butter
  • 3 ¼ cups old-fashioned oats
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 1 bag dark chocolate chips about 12 oz
  • cup peanut butter

Method
 

Prepare the oat mixture:
  1. In a medium saucepan over medium heat, combine the butter, brown sugar, and vanilla extract. Heat until the butter is fully melted and the sugar has dissolved.
Add oats and cinnamon:
  1. Stir in the oats and cinnamon, cooking for 2–3 minutes until the oats are lightly toasted and well coated.
Layer the oats:
  1. Grease a 9×9-inch baking dish. Spread half of the oat mixture evenly in the bottom of the dish.
Prepare the chocolate-peanut butter layer:
  1. In a microwave-safe bowl, combine the chocolate chips and peanut butter. Heat in 30-second intervals, stirring between each, until the mixture is completely melted and smooth.
Assemble the bars:
  1. Pour most of the chocolate-peanut butter mixture over the first layer of oats, spreading it evenly. Reserve a small portion of the mixture for drizzling on top.
Top with remaining oats:
  1. Spread the remaining oat mixture evenly over the chocolate layer. Drizzle the reserved chocolate-peanut butter mixture on top for a decorative finish.
Set the bars:
  1. Place the baking dish in the freezer for at least 1 hour, or until the bars are firm.
Slice and serve:
  1. Once set, remove from the freezer and cut into squares.
