Ingredients

  • 2 large egg whites
  • ¾ cup avocado oil
  • ½ teaspoon salt
  • cup granulated sugar
  • cup dark brown sugar packed
  • ¼ cup unsweetened applesauce
  • cup raisins
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 ½ cups all-purpose flour

Method

Preheat Oven:
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.
Mix Wet Ingredients:
  1. In a large bowl, whisk together the egg whites, avocado oil, applesauce, vanilla extract, and both sugars until smooth and well combined.
Add Dry Ingredients:
  1. Stir in the salt, baking soda, and cinnamon.
  2. Add the flour and mix until just incorporated.
Add Oats & Raisins:
  1. Fold in the oats and raisins until evenly distributed throughout the dough.
Scoop Dough:
  1. Drop rounded tablespoons of dough (or use a cookie scoop) onto the prepared baking sheets, spacing them about 2 inches apart.
Bake:
  1. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are just set. Be careful not to overbake — they’ll firm up as they cool.
Cool:
  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
