Parmesan Garlic Roasted Potatoes

This recipe is simple enough for a weeknight dinner but impressive enough to serve for guests or special occasions. There’s something incredibly comforting about golden, garlicky potatoes coated in savory Parmesan cheese—the aroma alone will have everyone gathering in the kitchen.

Ingredients
  

  • 3 pounds red potatoes halved
  • 2 tablespoons olive oil
  • 5 cloves garlic minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper to taste
  • 2 teaspoons unsalted butter
  • 2 teaspoons chopped fresh parsley

Method
 

  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet by lightly greasing it with oil or spraying with non-stick cooking spray.
Prepare the potatoes:
  1. Wash and halve the potatoes. Place them in a large mixing bowl.
Season the potatoes:
  1. Add the olive oil, minced garlic, thyme, oregano, basil, and grated Parmesan. Sprinkle with salt and freshly ground black pepper. Toss everything together until the potatoes are evenly coated.
Arrange for roasting:
  1. Place the potatoes cut side down on the prepared baking sheet in a single, even layer.
Roast the potatoes:
  1. Bake for 25–30 minutes, flipping the potatoes halfway through cooking to ensure they turn golden brown and crispy on all sides.
Add butter and garnish:
  1. While the potatoes are roasting, melt the butter in the microwave or on the stove. Once the potatoes are done, drizzle with melted butter and sprinkle with fresh chopped parsley.
Serve immediately:
