Patty Melts With Secret Sauce

This classic diner-inspired sandwich combines the juicy, seasoned flavor of a hamburger patty with melty cheese, sautéed onions, and a soft, buttery crust of grilled bread.

Ingredients
  

For the patty melts:
  • 1 lb. ground beef
  • 6 slices rye bread
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • Salt and pepper to taste
  • 6 slices cheddar cheese
  • 6 slices provolone cheese
  • 6 Tbsp. unsalted butter softened
For the secret sauce:
  • ¼ cup mayonnaise
  • 2 Tbsp. chopped cooked bacon
  • 3 Tbsp. ketchup
  • 1 tsp. sugar
  • 1 tsp. relish

Method
 

Prepare the patties:
  1. Shape the ground beef into 3 evenly sized, flat patties roughly the size of your bread slices. Season both sides with onion powder, garlic powder, salt, and pepper.
Cook the patties:
  1. Heat a skillet over medium-high heat. Cook the patties until fully cooked, about 4-5 minutes per side. Remove from the skillet and set aside.
Make the sauce:
  1. In a small bowl, combine mayonnaise, chopped bacon, ketchup, sugar, and relish. Stir well and set aside.
Prepare the bread:
  1. Butter one side of each slice of bread generously. Heat the skillet to medium. Place 3 slices of bread buttered side down in the skillet.
Assemble the patty melts:
  1. On each slice in the skillet, layer 2 slices of provolone cheese, one cooked patty, and 2 slices of cheddar cheese. Spread some of the secret sauce on the unbuttered side of the remaining 3 slices of bread and place them sauce side down on top of the sandwiches.
Cook the patty melts:
  1. Toast until the cheese starts to melt and the bottom bread is golden brown. Carefully flip the sandwiches and toast the other side until the bread is crispy and the cheese is fully melted.
Serve:
  1. Remove from the skillet, let cool slightly, slice if desired, and serve immediately.
