Preheat oven to 350°F (175°C). Grease two loaf pans.
In a large mixing bowl, combine the cake mix, pistachio pudding mixes, hot water, vegetable oil, and eggs.
Beat until smooth and well combined.
Add a few drops of green food coloring if desired for a brighter color.
Fold in the chopped pistachios.
Divide the batter evenly between the prepared loaf pans.
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaves to cool in the pans for 10–15 minutes, then transfer to a wire rack to cool completely.
