Ritz Cracker Salted Caramel Icebox Cake

The Ritz Cracker Salted Caramel Icebox Cake is one of those desserts that takes me back to childhood summers and weekend family gatherings. It’s a no-bake dessert that layers buttery, crisp Ritz crackers with a rich, creamy filling and decadent salted caramel, resulting in a treat that’s as visually appealing as it is delicious.
Course: Dessert, Snack, Treat
Cuisine: American

Ingredients

  • 2 8-oz packages cream cheese, softened
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup salted caramel sauce store-bought or homemade
  • 1 ½ sleeves Ritz crackers about 48 crackers

Method

  1. In a large mixing bowl, combine the softened cream cheese, heavy cream, sugar, and vanilla extract. Use an electric mixer on medium speed to beat until smooth, creamy, and fully combined.
  2. Lightly grease an 8x8-inch baking dish. Lay one-third of the Ritz crackers in a single layer on the bottom of the dish.
  3. Spread one-third of the cream cheese mixture evenly over the crackers. Drizzle one-third of the salted caramel sauce over the cream cheese layer.
  4. Repeat the layering process two more times—crackers, cream cheese, then caramel—until all ingredients are used, finishing with a layer of caramel on top.
  5. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or ideally overnight. This allows the Ritz crackers to soften and the flavors to meld together beautifully.
  6. Before serving, garnish with extra salted caramel sauce, a dollop of whipped cream, or crushed Ritz crackers for added texture and visual appeal.
  7. Slice into squares and serve chilled. Enjoy the creamy, sweet, and slightly salty layers of this indulgent no-bake dessert!
  8. Enjoy!
