Shrimp Scampi Pasta Bake

Everyone will be raving about this dish because of the combination of the golden cheese topping, juicy shrimp, rich garlic butter sauce, and tender pasta. Because everything bakes together in one dish, cleanup is a breeze, and it's a great way to impress guests without spending hours in the kitchen.

Ingredients
  

  • 12 oz linguine or spaghetti
  • 1 lb large shrimp peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup white wine or chicken broth
  • 1 lemon juiced and zested
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
Prepare the shrimp:
  1. In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
Cook the shrimp:
  1. Add the shrimp to the skillet and cook 3-4 minutes until they turn pink and opaque. Remove from the skillet and set aside.
Make the sauce:
  1. Pour the white wine (or chicken broth) into the skillet and simmer for 2 minutes, scraping up any flavorful bits from the bottom. Stir in lemon juice, lemon zest, and heavy cream. Allow to simmer gently for 2-3 minutes.
Combine pasta and sauce:
  1. Add the cooked pasta to the skillet, tossing to coat it thoroughly in the creamy sauce. Season with salt and pepper to taste.
Assemble the bake:
  1. Transfer the pasta mixture into a large baking dish. Arrange the cooked shrimp evenly on top. Sprinkle the Parmesan and mozzarella cheeses over the shrimp and pasta.
Bake:
  1. Place in the preheated oven for 15-20 minutes, or until the cheese is melted, bubbly, and slightly golden.
Serve:
  1. Remove from the oven and garnish with chopped fresh parsley. Serve hot and enjoy!
