Method
Prepare the slow cooker:
- Place the beef stew meat in the bottom of your slow cooker, spreading it evenly.
Add the vegetables:
- Layer the sliced carrots, diced potatoes, and chopped onion on top of the beef.

Season and add broth:
- Pour the beef broth over the meat and vegetables. Sprinkle with salt and pepper to taste.

Cook the stew:
- Cover the slow cooker with its lid and cook on low for 8 hours or high for 4 hours, until the beef is tender and the vegetables are cooked through.
Serve:
- Once done, taste and adjust seasoning if necessary. Serve hot with fresh bread or over rice for a hearty, comforting meal.
