Slow cooker beef and noodles

Slow cooker beef and noodles is one of those classic comfort foods that takes you back to cozy family dinners and lazy Sunday afternoons. The beauty of this recipe is that it requires minimal hands-on time—you simply combine a few hearty ingredients in your slow cooker, and by the end of the day, you have a warm, satisfying meal waiting for you.

Ingredients
  

  • 2 lbs beef stew meat or chuck roast cut into bite-sized piece
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 3 cups egg noodles
  • 1/4 cup flour
  • 1/4 cup water
  • 1 tbsp Worcestershire sauce

Method
 

Optional Browning:
  1. In a skillet over medium heat, brown the beef pieces on all sides. This adds extra flavor but can be skipped if you prefer a simpler method.
Load the Slow Cooker:
  1. Transfer the beef to your slow cooker. Add chopped onion, minced garlic, beef broth, salt, pepper, thyme, rosemary, and the bay leaf. Stir to combine.
Cook:
  1. Cover and cook on low for 7–8 hours, or until the beef is tender and can be easily shredded with a fork.
Add Noodles:
  1. About 30 minutes before serving, remove the bay leaf and stir in the egg noodles.
Thicken the Sauce:
  1. In a small bowl, whisk together the flour and water to create a slurry. Stir it into the slow cooker to thicken the sauce.
Add Flavor:
  1. Stir in Worcestershire sauce and mix well. Continue cooking for another 30 minutes, or until the noodles are tender and the sauce has thickened.
Serve:
  1. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired, alongside a side of steamed vegetables or a crisp salad.
