Slow Cooker Lemon butter cod

Flaky, tender cod cooked in a rich lemon-butter sauce is the kind of dish that feels elegant enough for company yet simple enough for a busy weeknight. The slow cooker does all the hard work, letting the cod absorb the bright citrus notes and buttery goodness while staying perfectly moist and delicate.

Ingredients
  

  • 4 cod fillets
  • 1/4 cup melted butter
  • 1 tablespoon olive oil
  • 2 lemons thinly sliced
  • 3 garlic cloves minced
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley minced
  • Salt and pepper to taste

Method
 

  1. Grease the bottom and sides of your slow cooker lightly with a bit of the melted butter.
  2. Arrange the lemon slices in an even layer on the bottom of the slow cooker.
  3. Place the cod fillets on top of the lemon slices, making sure they don’t overlap.
  4. In a small bowl, whisk together the remaining melted butter, olive oil, minced garlic, chicken broth, salt, and pepper.
  5. Pour the butter-garlic mixture evenly over the cod fillets, ensuring each piece is coated.
  6. Cover the slow cooker and cook on low for 2–3 hours, or until the cod flakes easily with a fork.
  7. Once cooked, sprinkle the minced parsley over the top for a fresh burst of color and flavor.
  8. Serve the cod fillets with the cooked lemon slices and spoon the flavorful juices from the slow cooker over the top.
