Method
- In a medium bowl, flake the salmon with a fork.
- Add onion, flour, cornmeal, egg, mayonnaise, salt, and pepper. Mix until well combined.

- Shape the mixture into patties, about the size of a burger.
- Heat 1 inch of oil in a skillet over medium heat.
- Fry patties 3–4 minutes per side, or until golden brown and cooked through. Drain on paper towels and serve hot.
