Make the sauce:
- In a small bowl, mix sour cream, mustard, hot sauce, and garlic. Season with salt and pepper. Cover and refrigerate until serving.

Cook the steak bites:
- Heat olive oil in a large skillet over high heat. Season the steak cubes with salt and pepper.

- Add the steak to the skillet (in batches if needed to avoid overcrowding) and cook 3–4 minutes, stirring occasionally, until golden brown.
- Reduce heat to medium-low. Add butter and minced garlic to the skillet. Cook 1–2 minutes, stirring, until steak bites are coated in the garlic-butter sauce.
Serve:
- Plate the steak bites, drizzle any remaining garlic butter over them, and sprinkle with parsley. Serve immediately with the mustard dipping sauce on the side.
