Sweet Alabama Pecan Bread

Ingredients
  

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs beaten
  • 1 cup vegetable oil
  • 1 ½ cups self-rising flour
  • 1 teaspoon vanilla extract
  • 2 cups pecans finely chopped

Method
 

Preheat the oven:
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
Mix sugars and eggs:
  1. In a large mixing bowl, combine the granulated sugar, brown sugar, and beaten eggs. Beat well until the mixture is smooth and creamy.
Add oil and vanilla:
  1. Slowly add the vegetable oil and vanilla extract to the sugar and egg mixture. Mix until fully incorporated.
Incorporate flour:
  1. Gradually stir in the self-rising flour. Mix just until combined — do not overmix, or the bread may become tough.
Fold in pecans:
  1. Gently fold the finely chopped pecans into the batter until evenly distributed.
Bake the bread:
  1. Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake in the preheated oven for 55-65 minutes or until a toothpick inserted into the center comes out clean.
Cool before slicing:
  1. Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
