Victory’s Tater Tot Casserole

This dish is the ultimate crowd-pleaser, but it’s also perfectly portioned for a family dinner or even a cozy meal for two. With layers of savory ground beef, creamy sauce, and crispy golden tater tots, this casserole is the definition of comfort food.

Ingredients
  

  • 2 lbs ground beef
  • 1 package taco seasoning
  • 1 can corn drained
  • 1 can 10 oz nacho cheese soup
  • 32 oz frozen tater tots
  • 1 ½ cups shredded cheddar cheese

Method
 

Preheat Oven:
  1. Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Cook the Beef:
  1. In a large skillet over medium-high heat, cook the ground beef until fully browned, breaking it apart as it cooks. Drain any excess fat.
Season and Combine:
  1. Reduce the heat to low and add the taco seasoning, stirring to coat the beef evenly. Cook for 2–3 minutes until fragrant.
Add Corn and Cheese Soup:
  1. Stir in the drained corn and the nacho cheese soup, mixing until everything is well combined. Cook for another 1–2 minutes to let the flavors meld.
Assemble the Casserole:
  1. Spread the beef mixture evenly in the prepared baking dish. Arrange the frozen tater tots in a single layer over the top.
Bake:
  1. Place the casserole in the preheated oven and bake for 45 minutes, or until the tater tots are lightly golden and cooked through.
Add Cheese:
  1. Remove the casserole from the oven and sprinkle the shredded cheddar evenly on top. Return it to the oven and bake for an additional 5 minutes, or until the cheese is fully melted and bubbly.
Serve:
  1. Let the casserole rest for a few minutes before serving. Enjoy warm, straight from the pan!
